Hello!
Everyone thinks about main dishes when freezing meals. What about side dishes?
Rice pilaf is a favorite in our house - Easy to make and freeze!



4 Tablespoons olive oil
4 Tablespoons butter
6 cups rice, uncooked
1 cup carrots, chopped
1 cup celery, chopped
1/2 medium chopped onion
8 Teaspoons low sodium chicken bullion
4 Tablespoons dried parsley
1Teaspoon black pepper
4 Quart freezer bags

Heat olive oil and butter in large skillet over low- medium heat. Add carrots, celery, onion and rice - stir about 10 minutes until rice is golden brown. Let cool.

Add 2 teaspoons bullion, 1 tablespoon parsley and 1/4 teaspoon pepper to each freezer bag - divide rice mixture into each bag - mix - remove as much air as possible and freeze.

To cook: boil 2 and 1/2 cups water - add frozen rice mixture. (Yep-that is a bonus-it's ok to forget to remove from the freezer!) Cover and reduce heat. Cook 20 minutes, or until water is absorbed.
